Each of these breads are made by hand using age old techniques and processes. Recipes for each have been tested and tweaked to suit the most critical of palettes. Each bread is made of pre-fermented starter or starter "discard" which lends to longer fermentation times compared to commercial breads, rolls, and desserts. Long fermentation not only adds to its unique taste but also aids in easier digestion even for those of light gluten intolerance. Crusts are crisp, inner "crumb" is light & airy.
Our breads are made with our CentralCal Saltwater starter, lovingly named, "La Serena," giving all our breads their distinctive tanginess, crisp thin crust & airy crumb.

Soft & chewy inside, crisp on the outside. You'll smell the spicy diced jalepeño (occasionally sliced) and smooth mild cheese as you open each package. Perfect as a compliment to your meals, it is also great as a snack on its own. We also like to pan fry slices or place in a panini grill with a spat of buttah or olive oil.. mmm, terrific for samiches!

A popular, aromatic bread, garlic is infused into this sourdough using crushed, minced and dried garlic then sprinkled with a 2 (or 4 cheese blend when available). Perfect for any Italian dish, as an accompanyment for salads or a snack with wine. Our breads are a new favorite among the High Desert.

This slightly tart yet hint of sweetness flavored bread is delicately sprinkled with fresh orange or tangerine zest (sometimes both when available) and generously stuffed with cranberries (fresh when in season). Tangy zest is visable in each slice!

Love bread but craving something a lil sweeter? Well, this one is for YOU! Every slice is filled with a mouth watering chocolate aroma and chocolate chips add a small soft crunch to just about every bite. Choose from dark, semi or sweetest milk chocolate chips. Enjoy also with a dusting of powdered sugar and it's a perfect tease of dessert-like goodness with wine, warm milk or even a dark beer, like a stout. *SF chips + $5

Made with our propietary sourdough starter, La Serena, we use whole grain wheat & oat flours, touch of salt, Kangan alkaline water and Kodiak Cakes enriched flour that adds whey, wheat & milk isolates whichs adds a whopping 56g of protein/boule or 28g per sandwich loaf (almost 7g/slice).

Always enjoyed the soudough bread bowls I'd order from central CA coastal restaurants over the years and recently, from San Francisco during a 2019 family trip to attend a beautiful wedding. So, to make things interesting, I came up with the idea of starting a sourdough starter while on our family vacation to Central Cal, October 2021, celebrating a special date and travel freedom after the CV19 craziness.
I brought with me a clean, protected jar, a measuring cup, some local flour and used bottled water and purchased a wooden spoon for mixing. These were #1 on my packing list! I'd mix liquid into dry, then lightly but securely cover my jar of wet flour and lovingly set it next to our hotel window to breathe in the saltwater air and receive some indirect sunshine.
With daily interaction, and by the time our vacation was over and it was time to head back to SoCal's high desert, I had me our coveted baby, Central Cal Sourdough Starter with budding naturally, wild ocean bred (no pun intended) yeasts and teaming with good bacteria as well! I named her (after much debate and friendly social media input) after our favorite hotel, "La Serena."
